Choco-Tahini Zucchini Muffins

So I am starting to see a trend here with the chocolate and tahini but the combo is just so delicious and works with everything from smoothies, as you saw in my other post, to muffins like this one.

People cannot believe that these are gluten free and vegan oh and no nut-free as well. Almonds and me do not get along so I tend to gravitate toward a seed butter or cashew. However, you can substitute any nut butter that you fancy.

Did ya know that Tahini has more calcium than milk, crazy!

Ingredients

  • ½ cup tahini

  • 1 banana

  • ¼ cup maple syrup

  • 2 flax eggs*

  • ½ tsp vanilla

  • ½ tsp baking soda

  • 1 cup shredded zucchini with water squeezed out

  • ½ cup cacao

  • ¼ cup dairy free chocolate chips

Instructions

  1. Preheat oven to 375 degrees

  2. Place all ingredients with the exception of the zucchini and chocolate chips into food processor and mix until smooth.

  3. Then place zucchini and chocolate chips and fold into batter with a spatula

  4. Transfer into muffin cups and bake for 30 minutes

  5. Remove from oven and let cool

  6. Enjoy

Notes

*1 flax egg= 1 tbsp flax meal:5 tbsp warm water
**Leftovers, if you have, can be placed in an airtight container
